Day 1 -Saturday- 11 am, an optional transfer from Rome City Center— includes stop in Orvieto for lunch & shopping on own; cost based on participation. Check-in, 5:30pm. 6:30 pm, Welcome Reception followed by dinner

Day 2 -Sunday-  Abbadia San Salvatore- B, D, at the villa; Experience an Autumn food festival celebrating the harvest of chestnuts, prevalent in Tuscany. The inhabitants in the village participate together in the preparation of traditional dishes. These are shared at convivial tables which are placed along the streets and in ancient town cellars.  Different generations work side by side as grand-children proudly volunteer to become waiters while grandmothers put their expertise at work in the many kitchens that are set up throughout the different town quarters. Afternoon entertainment usually consists in a musical appointment and the selling of craft-made objects or local produce such as honey, oil, and wine and chestnuts. The festival is based on volunteer work and the revenue goes toward one or more of the community’s associations.   Our guests continually share how special these festivals are and how much they enjou spending time with the locals. Day 3 -Monday- Cetona- B, D, at the villa; walk through the Award Winning, family-run organic olive grove with Federico and Tania and learn about the different varieties of olive trees, including a rare example of an ancient Etruscan variety called “minute di Chiusi” Enjoy a delicious homemade four course lunch prepared by the family’s  well-loved “nonna” Maria PiaDeparture from the villa at 10:00 am

Meet Federico and his family and allow their great passion and enthusiasm for extra virgin olive oil to give you a new perspective on this much loved (but little known) product – learn about the different nuances good quality extra virgin olive oils can and should have. After a stroll through their beautifully kept olive grove we will sit down to a delicious home-made meal for a fun, but at the same time extremely informative, olive oil tasting and pairing with Tania, a professional olive oil taster (the equivalent of a sommelier for wine). Every course (prepared with great love and care by nonna Maria Pia) will be paired with a different extra-virgin olive oil (own production), including dessert! On our way back to the villa, optional stop in the medieval hamlet of Cetona for a stroll, a cup of espresso or some excellent gelato!

Day 4 -Tuesday- B, B.L.D. at the villa; Choose between time at the villa, or a historical wine cellar for Brunello wine tasting or truffle hunting Visit the infamous village of Montelcino, home of the infamous Brunello wine. Enjoy a  light lunch & Brunello tasting at Ciacci Piccolomini wine estate & tour of their historical wine cellar instead of their modern facility.

Day 5 -Wednesday- Pienza  B, D, at the villa; take a stroll through the town of Pienza, admire its magnificent Renaissance buildings and do a little shopping. Visit one (or both) of Pienza’s most renowned living sculptors, Emo Formichi (93 in January 2019!) and Piero Sbarluzzi (late 70’s). Both sculptors have lived all their lives in Pienza, surrounded by the clay hills of the Valdorcia. You will see how their art has been greatly influenced by their cultural heritage and closely represents the history of the valley. Lunch at family run, organic farm near Pienza, Il Casale – lunch is based on the farm’s products which include their own pasta, extra-virgin olive oil, wine, homemade bread and last but not least, what they are most renowned for: a vast selection of excellent raw milk goat and sheep cheese (caprino and pecorino). Meet Sandra and Ulisse and learn about this family’s philosophy and what brought them to the Valdorcia nearly thirty years ago to start a new life in organic farming (at a time when organic farming in the remote hills of the Valdorcia was unheard of).  Dine tonight with our special guest. Francesco- restaurant owner and sommelier- who will introduce us to some of his favorite wines!

Day 6 -Thursday- San SAN QUIRICO D’ORCIA – B,D, at the villa; our day includes a tour of a historical traditional stone oil mill where you will meet Ilaria, owner of the family estate and historical oil mill in San Quirico d’Orcia’s old town. Learn about her family and why she chooses to maintain a traditional stone mill rather than convert to new techniques of oil extraction. The olive oil tasting will be accompanied by a tasting of the family’s wine production, an excellent DOC Orcia. After our visit to the mill, we’ll stop for a light lunch at a wine shop, surrounded by some of Italy’s best wine labels; run by two young and enthusiastic entrepreneurs, Alessandro and Luca. Time for a little shopping, or visiting a microbrewery in town. In the afternoon, we will visit nearby Egisto’s saffron farm and learn why this spice is so precious, how it is cultivated and learn how this precious spice was once widely grown in the Val d Orcia during the Middle Ages.

Day 7 -Friday-  B,L,D at the villa; join a lunchtime cooking class in the villa with Chef Katie. Relax & enjoy one last day in the villa before a celebratory farewell dinner. Our special guest is Simona De Vecchis, a biodynamic wine maker who will share her wines paired with our dinner.

Day 8 -Saturday- 11 am, an optional transfer from Rome City Center— includes stop in Orvieto for lunch & shopping on own; cost based on participation. Check-in, 5:30pm. 6:30 pm, Welcome Reception followed by dinner.
